i have quite a lot of quince in my garden, anyone got any idea's besides jam........mack

Quince jelly is lovely, think you can also make a sauce to go with goose or similar. Have you tried googling for quince recipes?

Being the frugal, can't let anything go to waste, type I've tried making quince jelly. Didn't like the taste. Now I just put a few on a dish as a fragrant 'still life'; love the smell.

Quince wine is my absolute favourite and sOO easy - you just have to cut them into quarters ! If you are seriously interested I will see if I can find the recipe as I haven't made wine for a while.

A friend used to have loads but sadly she moved and i find them hard to get now!Otherwise i would still be at it!

As promised, recipe for quince wine:

3lb ripe quinces
3lb granulated sugar
6pts cold water
wine yeast
yeast nutrient
campden tablets

Wash quinces then simply cut into four. Crush campden tab and put in bottom of plastic bucket . Put quinces in then pour over water. cover bucket and leave in a warm (but not hot) room for 1 day. Then add yeast, yeast nutrient and sugar. Cover and stir well twice daily for 5 days.

Then strain into sterilised demijohn with airlock, top up if necessary with cooled boiled water and ferment until bubbles stop in airlock. Rack wine into clean sterilised demijohn, top up with cooled boiled water then add campden tablet. Leave at least 6 weeks - longer is even better - do not bottle unless wine is clear.

Bottle, then leave at least 1 year before drinking. YUM.

Got this from an old book and I have made it many times. If you get alien like beings growing in the demijohn just rack it off!

We have access to a Quince Tree. We usually make Jam, but I seem to recall mixing some in an Apple Crumble.

It's my favourite Jam by six and a half miles !!

Properly made quince and damson jam are lovely, with just a little 'bite' t them.

we have quince growing here, not sure if they are like uk quince, these are huge, a bit like a large apple in size and very hard to cut. i've found it's best to soften for 1 minute in the microwave first before cooking and then i use them in crumbles and pies and as an alternative to apple for sauce with roast pork
