Cardoons

Hello, has anyone grown cardoons and what are they like to eat. We have four cardoon plants coming up on our allotment and I wondered what they taste like and how to cook them. Has anyone got any vegetarian friendly recipes. Thanks.

Did you plant them or did they 'come up' by themselves? Or is it a new plot?
No idea what they are like (or even what they are) I'm a trad veg fan.

I had to google them !

Looks like they're similar to Artichokes, pretty central Med, so you would probably have to copy their climate a bit.
