courgette mousse starter

this is dead easy, cheap and yummy. also gets rid of those big courgettes (marrows!) that arent quite big enough to stuff.

serves 4

grate 1 large or 2 medium courgettes
mix in tbsp olive oil, pinch of dill, 1 clove of crushed garlic and a few mint leaves finely chopped.

then beat 2 large eggs (we've all got plenty of them!) with 10ml of cream or creme fraiche, and a little gound pepper till 'fluffy'

mix the two mixes together (fold gently so you dont loose the air)

line 4 ramekins with thinly sliced streaky bacon (dont trim, just leave excess hanging over side)

pour in your mousse mix and fold excess bacon over to cover

place ramekins in a bain-marie (pan of simmering water that doesnt cover them) for about 10 mins

test for firmness with a clean knife (it should emerge clean when cooked)

chill then serve with a little salad
