Hi Folks,
This week in my organic box, I got some salsify.
They say it tastes like oyster. But the one and only oyster I have ever had was in 1975 so I can't remember. Anyway at a loss what to do. I boiled it and then put it in a tomato sauce with pasta. It wasn't bad.
Anyone got any other recipes if I get any more.?

HI Wendy, in Germany its called 'Schwarz wurzel' and we used to have it in a white sauce which tasted of vinegar.. I'll have to ask my mum for the recipe.. It was one of our favourites! had the unfortunate side effect of causing flatulence though if I remember rightly.. ho hum.. :oops:

Ok. Got it..
Make a basic white sauce and beat in an egg while the sauce is still hot, then add vinegar and salt to taste (white vinegar).. add the cooked salsify.. done..
