What to do with beetroot!

I've got some beetroot on the allotment. Just realised last night, growing it and don't know what I should do with it. I know you have to be careful about preparing it cos of the staining, but anyone here have any suggestions as to what I can do with it - apart from pickling it.

Hi Bluebell,

how about using beetroot in a general chutney,roasted in the oven as a veg or even ice cream!!!!!You can make a chocolate sponge with beetroot in it,really yummy!!!,google beetroot recipes,there are some goodies!

i always use my beetroot to pickle simply boil in water for approx 20 mins until soft tthen scrape skin off and slice and put in jar with malt vinegar my kids love it too lovely x

Hi Bluebell.
Beetroot and feta cheese salad is great with some home grown rocket leaves, a splash of good olive oil salt and pepper and some basil.
a great summer dish to go with fish, give it a go you will love it

I make borsch...russian beet soup. Gorgeous colour and very tasty )c+ with a swirl of sour cream and chopped chives to decorate.

A few years ago I made a beetroot cake, simply to use up some I had.

When making the cake the mixture is a bright pink colour, as you would expect using raw grated beetroot.

However ... when baked the cake is 'normal' coloured with not a hint of pink to be seen! Quite remarkable, and therefore quite hard to convince eaters that it really is made out of beetroot.

I LOVE beetroot. Cooked, in salad. Pickled, (not tried the cake yet). However, used it in a juice the other day and think i must have used too much as it was truly awful! yike*
