On my box of Lincolnshire free range eggs it says store them in the fridge, and get them out 30minutes before you use them.

I store them in the fridge but make sure the water I'm going to boil them in is not quite boiling to start.

I've been given a rhea's egg and it is in the wine rack in the fridge. I think that will need to be out 24 hours before I crack it and I'll probably leave that to the other half!

Hi i have six on my wire chicken at room temperature for baking(they help cakes rise ar room temp) and i also use room temp for dippy eggs so they don,t crack when i boil them. The others in the fridge i use for srambling and omleting ,frying etc xx
