I have just been given a bag of courgettes. I do grate them in alot of things like lasange and shepereds pie (don,t tell the kids) but what else can i do with them...any ideas? thanx xx confused>

There are 102 recipes for courgettes on this site, chickentina, some of them look scrummy, think I might give one or two a try, I have masses of them.

slice and fry ( not brown) until tender but not overcooked, mix in say 3 eggs to 2 courgettes, with a small handful of grated parmesan beaten into them, and maybe some chooped parsley or a bit of thyme, then pour on courgettes, and cook more or less like scrambled eggs.
Nice with a bit of fresh bread for a light meal.

courgette risotto - make a normal white risotto, and chuck in a courgette or two, finely diced about 2 minutes before the end.

Aww thanks for those they look yummy.
I found this recipie and cooked it this afternoon, all my kids and hubby cleared a big pan of it and they all don,t like courgettes.

I roast mine - slice them in half lengthways, and pop in with any other veggies being roasted, such as carrots, sweet potatoes, potato, celery, beetroot, etc. Scrummy!

(If you leave them whole when roasting them, they sort-of steam within the skin, and are quite yukky, in my opinion)

I like mine sliced and quick fried so they caramelise on the outside without going mushy. )c+

Although I grow courgettes I am not a great lover of them, since being a bit unwell after eating a vegetable lasagne I made, which was full of them. I don't think it was the lasagne, but the extremely large volume of a beverage which can give you a slight headache the next morning. :oops: :oops:

I don't want to give people the wrong impression of me - I'm lovely really, I have told my hubby that every day of our married life - one day he will agree. )j;

Stuff them!!
Mix handful of homemade breadcrumbs, minced onion and garlic, herbs (parsley chives oragano what ever you like) grated cheese, some ham or bacon (just as nice without) mix all together with an egg and black pepper. Slice courgettes length wise scoup off seedy middle and pile up with mixure. Bake for about 20 mins.

Quick, easy and tasty snack:

Slice the courgette at an angle so you get large, flat discs about 1/2 inch thick. Grill them on one side, then turn over.

Mix up mayonnaise, parmesan and fresh basil in a bowl. Dollop on top of the courgette discs and grill until browned :)
