Yes I know. Pictures! (You can have them later)

I just dug up (yesterday) my first GIANT parsnip. What a surprise. I was expecting something maybe 6 inches, 10 inches if I was lucky.
Well try 2 foot!!!!!! WOW.
Yesterday, steam parsnip with my tea.
Today honey roast parsnip. A plate full on their own with a glass of scrumpy.
Sod waiting for the first frost. These puppies are getting dug up one every 2 days until they have gone.

Woohooo!!!!!

Yes they are that good!

I've always read that they should be harvested after the first frost.
But these are so big I think they will go woody if I leave them too long.
The steamed parsnip I did yesterday was not really sweet but still VERY nice. I left the remain half in the fridge over night and sliced it into chip size pieces, put it in the microwave with a teaspoon of water for 5 minutesand roasted until golden brown (tossed in a little olive oil) It was sweet.
I then tossed in a teaspoon of honey and put back in the oven on 220 for 10 minutes until dark golden brown.
