Half a medium red onion thin slices boiled spuds left from last night out of the fridge. optional - little bit of left over bacon ham or sausage from the fridge finely diced. Seasoning including one clove of garlic. and fresh cracked black pepper. (Tiny bit of salt if no bacon or ham) Put a little good oil (olive maybe) in a medium to hot frying pan. Soften the onion put in the fine chopped garlic and pepper. Ad a little more oil if required, add the potatoes. After a minute or so when the potatoes have warmed through, turn the heat up to crisp and colour the edges of the potatoes. Serve with a dollop of ketchup, a nice cuppa and a thing chunk of wholegrain bread. VERY tasty and a good alternative to the cardboard in a packet stuff. Not dissimilar to my breakfast today, although mine didn’t originate in an allotment.
It Served just me: 1 brown onion coarsely chopped. One green pepper coarsely chopped, One red chilli finely chopped, 1 squished and chopped clove of garlic, 1 medium maris piper potato baked and broken to bite size pieces. 2 peppered mackerel fillets skinned and flaked. Half a pot of low fat cheese (about two table spoons) Method: 1. sweat off the onions and peppers etc, 2. bung everything together and mix well. 3. put into breakfast container and place carefully in work bag. 4. run to work via an hour in the gym, 5. have restorative shower and limp to desk (too much time on the rower), :cry: 6. discover that breakfast pot has ejected breakfast into workbag interior, 7. swear, 8. scrape breakfast back into container whilst using further expletives, 9. enjoy recovered breakfast with a sprinkling of earl grey tea (black, half a sugar please) when a colleague knocks your arm for a bit of a laugh. All very enjoyable. Yesterday I had Chinese noodles with peppers, grated carrot, chilli, garlic, beansprouts and bacon seasoned with soy sauce and sesame oil. Folk at work think that I’m a bit weird because of my unusual eating habits; but as Orfy says I’m not the one eating cardboard from a packet (although I did find a bit of fluff from the bottom of my rucksack this morning (which I didn’t bother eating)). Today was going to be the first day of me eating healthily and trying to get rid of something which resembles a bicyle tyre around my middle!
