Fruit pancakes for breakfast

Made beautifully light pancakes this morning. We use sourdough as the base but they turn out sweet as the base is mixed with syrup, butter and an egg. Then finally add bicarbonate of soda, which gives them the light fluffy texture. Served with banana, raspberries, blueberries and creme fresh.

All fuelled up for a day in the garden now :-D

1 - cup sourdough
2 tablespoons butter - melted in microwave
1 - tablespoon golden syrup
1 - egg - beaten
1/2 teaspoon bicarbonate soda dissolved in 1 teaspoon warm water

Combine all the ingredients other than the bicarbonate soda and whisk well with a hand whisk. Add milk as required, to give a pancake mix consistency.While doing this heat your frying pan on the stove. Immediately before use add the dissolved bicarb and whisk well, use immediately. Make your pancakes as thin as possible, the bicarb gives the mixture little bubbles that make the pancakes very light.

Thanks a lot Michael. I will make them for a lovely sounding change. Something to go with my usual fruit and home made yoghurt. Will get the sourdough started today. It will also get me back onto bread making )t'
