Cheap and easy tea cake recipe

Hi all,

A few months ago i was on the look out for a cheap cake recipe that I could share and enjoy with my vegan friends.

I looked at this yesterday and thought I'd try it this morning. Can't make the link work now - even typing in the path doesn't make it work.

Did anyone copy it out, please??? I have been asked for a vegetarian cake for an event next week and this looked fab.

I've had this recipe which I call Brack for years. I soak the fruit and sugar overnight in tea and add some cinnamon or mixed spice. Its better next day as I like a moist cake.

Oh thanks! The oven is now full of lunch things, so will try this on Tuesday - which is my normal baking day.

Lovely.

Have made flapjack and banana loaf so as to use the oven during roast-cooking.

Happy days.

PS - I've written it down now!

Gorgeous! I made some yesterday and although I think mine might be a little too moist, perhaps my oven's reg4 isn't quite the same as 180C, the taste is wonderful. I might try adding a little cinnamon next time but I really like it as it comes.

I've just started with a tsp of ginger and a tsp of cinnamon. One word - lushilicious!
