how far in advance can i make cupcake sponges? could i male them this week and freeze them for two weeks time. then ice them on the day?

Absolutely you can - the only thing I would mention is that sometimes the cake cases come away during freezing, but you could always pop the cakes into fresh cases after defrosting.

I made some choc fudge cupcakes today, using my new toy - a chocolate mould which makes little bars of choccy!

They look delicious!!

Boosmummy...I freeze birthday cakes too so you're not rushing at the last minute...I think sometimes they're moister because of it ....I don't know if that's true but it seems so.

Sadly mine never make it to the freezer 1. They get eaten before they get there. 2. There is never enough room.
