Decent apples will keep. We had cookers from our tree last year up until January. Just kept them in a cool place under the stairs.

Hi Linda,

It's white wine vinegar. The high acidity in vinegar helps to preserve the fruit/veg in chutney.
If you substitute the raisins for another dried fruit, chop them up quite small like the raisins.
Also, and this is important! Do not eat the chutney for 1 to 2 months after you have made it; to begin with it may taste vinegary and not so nice, but once the flavours have matured, delicious.
I have looked up another recipe, the main ingredient is apples,(it also contains sultanas!) I have not tried this one. Do you want it? Or, I could recommend the very good book it's from if that is allowed? If I can't post the name of the book, I could PM it to you.

Micheal i have thought about storing some but our freezers are under our stairs and i dont think its cool enough and at the minute we havnt got a decent shed to store them )t'
We did have but the girls have nabbed it for thier budiour sp? {rofwl} Lindaxx

My friend across the road always gives me lots of apples. They usually last almost until Christmas, I store them wrapped in newspaper in plastic trays. Just had a bag left at my door, some I will cook now, others will be stored.

If the 'girls' have wings, maybe you could hang a few bags of apples from the roof, or put planks across the rafters to make an apple loft to store a few trays of apples.

I used to keep them in the garage, but one year the mice found them, and passed the information to the next generations, so the porch behind the kitchen (enclosed and 2 doors) gets filled now.

Chose the unblemished ones for storing. When I was more fanatical I had trays for 'today', tomorrow', 'this week' 'soon', 'good', 'best'. Now there are quite a lot of seconds still on the orchard floor for the wildlife.

Hi Linda, sorry for the delay; had a busy weekend.

Here is the second recipe, (shortened) it is from The Preserving Book by Lynda Brown.
I love this book...

Apple, sultana, and date chutney. Makes 5 jars.
Keeps for 9 months, store opened jars in the fridge.

2kg Cooking apples, peeled, cored, chopped
3 onions, peeled and finely chopped
1 inch piece fresh ginger, peeled and finely chopped (Snoopy tip: Freeze a piece of ginger and peel and grate some off it whilst ginger still frozen which is a lot easier than chopping).
115g sultanas
125g dates, chopped
1 tsp mustard seeds
1 litre cider vinegar
500g granulated sugar
Method
Put all ingredients in a pan, stir well.
Put on low heat, stir until sugar dissolved, bring to boil, turn down heat, cook gently for one and a half hours until chutney thick. Bottle as before, ready to eat after one month.

Jan just boils the apples down and adds sugar, then puts into long foil containers (take away ones), then freezes until needed! )t' ......apple crumble Mmmmmmmm )eat(
