Red onion chutney question

Sorry, me again! I am just making a shopping list to make red onion chutney. Recipe only says brown sugar, but not which one.
I've got Muscovado. Can I use this or will it tastes too strong?

Made onion chutney and cried a lot of tears! It tastes delicious, but it didn't thicken at all! :?
Ingredients I've used:
red onions
red chillies
soft brown sugar
red wine vinegar
balsamic vinegar
bay leaves

I filled it into jars and am thinking about reboiling it, but is there anything I can do to help it to thicken? >coc<

I was going to reboil to reduce the liquid further, but after opening 1 jar it seems ok now.

I've created a lighter brown sugar by mixing half muscovado and half granulated sugar and its been fine. I love red onion chutney )t'

Mad Chick made a delicious red onion marmalade last winter. It was really yummy.

Perches also makes excellent preserves... not sure if Penn does or not though I haven't had the opportunity to taste any of her produce :-D :b(
