My son complimented me on my mulled cider, so here is the recipe.
Put water in a small pan, not too much, say 0.2-0.3 liter. Add spices: cinnamon stick, cloves, lemon/orange rind, ginger, whatever you like. Simmer for ages. Strain, put in a little bottle. This will keep practically for ever, you don't have to keep it in the fridge.
As well as for mulling alcohol, you can add a bit to your hot apple juice etc. whenever you fancy.
For mulled cider I use the following. Of course you can use this concentrate to make anything, any way you like:

2.5l cider, 0.2l. apple juice concentrate (from wholefood shops), 7 tblsp sugar, 1.5l water.
Heat, add some of your mulling concentrate. Adjust the taste by adding more or less concentrate, sugar, cider, water applejuice etc.
