Gooseberry and Elderflower combined is lovely....so all the things you've talked about but with Elderflower in as well is yummy. Gooseberry Liquer is good (I had an old Aunty made it ...tried it once but have never actually made it) ¸.•´¸.•*´¨) ¸.•*¨)✰

Re: any exciting ideas for gooseberrys?I've made a gooseberry upside down cake type thing in the past.
Gooseberries and other fruit (e.g sultanas, apple, whatever's about), bit of spice and honey. Then make up a sponge type mixture (or pineapple upside down cake mixture). Put the fruit in the bottom of an ovenable bowl, cake batter on top, slow cook with foil on for around an hour, remove foil and let it brown, not burn :) Plate on the top of the bowl, tip it upside down, fruit on the top. YuM! :)
Re: any exciting ideas for gooseberrys?It makes a nice sauce with mackerel or other oily fish. Or...a nice jam that goes stunningly with clotted cream either on a scone or as a cake filling.
