Beetroot ideas please

Hi,

Bought a bunch thinking we don't vary our veg selection enough, now not sure what to do with them and whether to peel then cook or the other way around. Ideas would be much appreciated. Thanks.

Twist the stems off then boil in their skins .. they take a while boiling but you can cut the cooking time by cooking in the microwave .. add a little water to a heatproof dish and cover, cook for 8-10 mins...remove skins after cooking. )t'

My friend has just given me a jar of beetroot relish that she made it is scrummy, I will ask her for the recipe.....

We grow a lot of Beetroot, some we boil and pickle in vinegar which last ages. You can also freeze it raw. Wash and cut up into chunks then put into a bag in the freezer. It's great roasted in the oven with potatoes, onion and garlic )like(

My mum used to serve cooked (boiled I think) sliced beetroot topped with cheese
sauce with a sunday roast. yumm!
When they're boiled the skins sort of rub off with your fingers.

Thank you for those ideas, all. If you ever get the relish recipe I'd be grateful too.

I feel a bit embarrassed that I don't know how to use something so basic and that used to be very common. I only really remember it pickled from jars in a sunday salad.

Keeps well and taste lovely (if your a beetroot lover) and beetroot is very good for your health system.

I'd never have thought of that, Barbo, and I'm guessing you could use some other veg in the same way. Someone offline also suggested wine, which I'd never have thought of either.

As I have used up the jar of beetroot relish that my friend gave me I have been on the lookout for something similar and found that Branston of the pickle people make a beetroot pickle so I had to buy and try )eat( whilst it is not as good as the home made stuff, for anyone without a glut of beetroot and no friendly relish maker it is a pretty good alternative )like(
