Instead of the usual mince, onions, herbs and tomato messing about and white sauce washing up, I purchased a son-of-morris tin of beef bolognaise (surprisingly low fat content) and a jar of lasagne white sauce.
Layered it nicely with quick cook lasagna sheets, sliced the one tomato I had skulling about, sprinkled on a little (reduced fat) cheddar, and hey presto enough for two days beginning with T (today and tomorrow)
