Pancakes

I do love pancakes. When my kids were little, scotch pancakes were regularly on the menu before trundling off to nursery. They are soooo easy to make, and quick.

That's what I had for (late) breakfast today. Scotch pancakes with maple-ish syrup, not the real thing, and fake lemon.

Saving the surviving real lemon for 'proper' pancakes later. YuM!

Can you freeze them?
And how did you reheat them?

Yep you can freeze them Mo (I regularly freeze pancakes and waffles)

You can pop them either in the oven covered in foil and reheat that way or pop the in the microwave for a minute or two.

Waffles I do in the toaster on the frozen setting for toast or again in the oven till heated through.

I had my pancakes at my daughters this year. My grandson (6yr old) emailed and invited me. His parents were busy cooking pancakes for 7 - Tom really enjoyed his pancake party.

I didn't bother to make any this year, some years we have some and others we just don't bother. Last year I made some sourdough ones and they were absolutely gorgeous, but I forgot to take some of the mother culture out of the fridge and feed it this week, so no pancakes for us :?
