Courgette Pickle Relish

As we have a glut of courgettes I've been trying different things to use them up.
I found a recipe for a courgette pickle relish that is on the spicy side and apparently goes well with burgers etc. so I thought I'd give it a go.
Made up two 1lb jars and popped them in the fridge to mature for a few days before trying them. I will let you know what it's like )t'

Just cracked the first jar and it is delicious.
It is quite crunchy, very flavourful and pretty damned spicy, mind you when it said use 1 tsp of mustard powder I did use my Gunpowder mustard which has definitely given it a bit of bite.
Will do burgers tomorrow and bung some inside )eat(

June,
Your wish is my command )b(

500g courgettes.
3 shallots, finely chopped.
2 tbsp salt.

For the pickling liquid:-

500ml cider vinegar.
140g golden caster sugar.
1 tsp mustard powder.
1 tsp mustard seeds.
1 tsp celery seeds.
½ dried chilli, crumbled.
1 tsp ground turmeric.

Thinly slice the courgettes and put them in a bowl with the shallots and sprinkle over the salt. Cover with ice-cold water, about a litre does the job, stir to dissolve the salt and leave for 1 hr. Drain the courgettes thoroughly and dry them with kitchen roll or tea towels. If you don't the water will dilute the pickling solution.
Bung the pickling ingredients into a pan and bring to a simmer. Let them bubble for 3 minutes, making sure the sugar has dissolved, then leave to cool until warm but not hot. Add the courgettes and stir.
Scoop the mixture into sterilised jars, seal and leave for a few days in the fridge. Kept chilled, these will keep for a couple of months.
Recipe makes up two x 1lb/500g jars.

Slapped some in the burgers tonight and it really added some zing. Ali liked it too so I think I've earned 0.0000000000000000001 of a Brownie Point )t'
