Celeriac & Apple Soup

This is for Katiee.

I make my soup in a soup maker - all one one blender. Its great - we eat a lot of soup and use a lot of veg from garden/allotment.

Olive Oil - soften garlic/onion

Add chopped celeriac and peel core and chop about 4/5 apples and add.

Add about 750 ml veg stock

Season salt pepper (I usually just do fresh ground black pepper).

Simmer until all veg soft.

Blend into a creamy soup and add a spoonful of honey if you like! VERY easy.

Yesterday I bought two celeriac (£1.50 each from M****s*ns but we love celeriac) We do grow them but not ready yet. Used one for the soup and will make some garlic and celeriac mashed potato for Sunday roast tomorrow.

That sounds pretty yummy, we like soup as well, favourite homemade is cauliflower cheese soup done in slow cooker.

Hi LB I just made the soup today...really good! I had a few carrots desperate to be used up and likewise with some spring onions, so I tweaked it a little....but that's just what homemade soup is all about, eh? So I will definitely make it again. Thankyou )t' )t'
