Mushroom & Lentil Bake

Mushroom and Lentil Bake

Serves 4

Time 1 hour 10 min’s

! tsp olive oil
2 shallots, chopped
2 cloves garlic, crushed
500g (1lb) mushrooms
2 tsp sweet smoked paprika
75g (3oz) green lentils
500 ml (18 fl oz) vegetable stock
625 g (1lb 7 oz) potatoes

Method (mode de emploi)


1 Heat oven to 160c-140cfan-gas3.
Gently cook the shallots and garlic in the olive oil in a large, shallow, ovenproof pan or dish, until soft.

2 Slice ½ the mushrooms and cut the remainder in ½, add them all to the pan and cook for 5 min’s on a medium heat.

3 Add the paprika, lentils and stock and bring to a simmer.

4 Finely slice the potatoes on a mandolin and neatly arrange on the top of the mushrooms. Cover loosley with tin foil and cook in the oven for30 min’s.

5 Remove foil and cook for a further 20 min’s until the sliced potatoes are golden in colour.

2.9g fat
0.4g saturates
0.4g salt

I'm still deciding about tonight's Dessert.

It's either the Heston Blumenthal’s Häagen-Dazs Double Chocolate & Banana Baked Alaska Cake - or a couple of Digestive Biscuits.

Probably go for the Biscuits.



Wish I was coming round there though - looks good !

Richard, word of warning :- if your friends be female, the digestives will only be acceptable if they are the chocolate variety and then you'll have to explain to their menfolk why you were fighting them off!!!!

Personally, I don't have a problem with them, but I have had to give up strawberries as they go straight to my hips!

My desert is cheap out of date (May 2008) :shock: packet sponge mix baked in the microwave, and free stewed apples.
