It is important to blanch vegetables for freezing (except soft fruit which should be washed, dried and open froze - pack later) I have an old book which is very comprehensive and covers all fruit and vegetables. Blanching preserves the life of the vegetables if it is done correctly, it also kills any organisms which may be present. I have known people that don't blanch but I am unwilling to take the chance. Hope this helps PK... I never blanch. Haven't seen any difference.
