Potato and Rice flour wraps

Post by AnnaB »

Bought 2 lots of potato flour by 'mistake' and needed to use the one quickly. Searched for recipes and came up with this.

I left the sugar out as they were used as wraps for a prawn stir fry.

Thanks for this AnnaB. The link didn't work, but I found it anyway (anyone having problems try this: http://www.purr.demon.co.uk/Food/Wheatfree.html#Rice%20Potato%20Pancakes )

My husband is following a Gluten and grain free, dairy free, legume (pea family) free and refined sugar free diet (he has Multiple Sclerosis), and I'm always looking for good "alternatives". When using gluten free flours adding Xantham gum (available in a jar from health food shops) can help with the texture.

I'll give the wraps a try.

There is an interesting Polenta chocolate cake recipe futher down the page )c+
