Saw the mention of Crab-apples on the Natures Gifts section so thought i would post a recipe i've just tried.

Crab-apple liqueur
( recipe converted from american, and reduced in quantities )

Kilner jar or similar ( i used a 2 litre Le Parfait Jar )
2 Litres Crap-Apples, washed, cored and quartered ( bit of a boring job, due to the small size )
17.6 fl oz Granulated Suger
13.2 fl oz vodka

Fill jar with prepared crab-apples.
Add sugar and vodka.
Store jar on its side, turning once every day for 16 days to help sugar to dissolve.
After 16 days, filter out the fruit bits and bottle.

And that's about it

Makes a nice red liqueur that is sweet and warming. very tasty. I used a few minatures and an empty vodka bottle that i had emptied a while ago for the bottling of the liquer. Hopefully saving some for christmas, but if not i'll just have to make some more as the tree is still heaving.
