As it happens Steve I have done a bit of that also. My biggest project was a Trike.
Take one front wheel drive automatc car, cut every thing away so you are left with engine and running gear. Then take the front end of a motorbike and weld it in front of the engine. Add a couple of seats etc and Bobs your uncle. )t'
Before you ask it was fully road worthy with mot and tax when I handed it over to the customer. :-D
