But here is a question for more experienced chutney-makers (it was only my second go). I follow the recipe and simmer for as long as sugggested but have found that there is too much liquid still. What I have done is continue to simmer until it eventually reduces - some hours more than the recipe suggests. Is this the correct thing to do? Next time I make chutney shall I simply use less than the recommend vingar/liquid and go by experience?

Reducing anything is fine as long as it doesn't burn. We make tomato puree and this can take up to 4 hours. Don't think we will be making any this year due to the state of the tomatoes!! |
