Just thinking about the time it takes to boil beetroot, especially mine at present which I can't pull up quick enough and they get huge......

can you cook them in the microwave?

To me, a mere bloke, the microwave cooks from the inside - so it's easier to see they're done.
Plus the microwave would be a far less expensive option energy wise.

Also, wouldn't it keep the goodness in?

Has anyone experience in this?

PS - We eat them cooked on salads and sometimes roast them for Sunday Lunch.

Got rid of the microwave years ago after reading it destroys about half of the vitamin content of food.
Maybe you will have to experiment, I boil mine and then freeze them, we then use them as a vegetable in a cooked meal.

Hi Richard

I started microwaving beetroot. I put 4 in a bowl with about an inch of water and put on full power for ten minutes. Worked perfectly.

I have been getting beetroot the past 3 weeks in my organic box. The cooking for an hour or so is a pain.
