Just thinking about the time it takes to boil beetroot, especially mine at present which I can't pull up quick enough and they get huge......
can you cook them in the microwave?
To me, a mere bloke, the microwave cooks from the inside - so it's easier to see they're done.
Plus the microwave would be a far less expensive option energy wise.
Also, wouldn't it keep the goodness in?
Has anyone experience in this?

PS - We eat them cooked on salads and sometimes roast them for Sunday Lunch.
