Cowboy Beans Recipe.

A few people have asked for the recipe.
It's taken time because usually my kind of cooking is to read a recipe, take inspiration and create something of my own, so there is usually no written recipe for the dishes I do.
When Something works and I'm happy with the Final version I try to record

I've modified the original recipe with a few additions after researching authentic recipes.
The Main addition is coffee and tomatoes.

I'm not a cook that weighs things so it's to taste or by judgement.

I used 2 packs (1kg of Pinto Beans, you can substitute for other beans if you wish)
I wanted to used smoked ham hocks but it's difficult get hold of so I got around a pound of trimmings of dried cured smoked bacon. And used two normal ham hocks.


1KG Pinto Beans
2 Ham Hocks
2 Onions
1 Scotch bonnet Chilli (Other Chillies will do.)
1 Tablespoon of Brown Sugar
1 Heaped teaspoon Smoked Paprika
1 Rounded teaspoon Cayenne Pepper
1 tablespoon course ground black pepper
2 Tins chopped tomatoes
1 Cup fresh brewed ground coffee

I used a quick soak method to start the beans.
Then added the ham and covered with water.
The ham was not done by the time the beans had softened so I removed the ham. Strained the bean and reserved the beans for adding back in later. I trimmed the Skin and fat from the ham and returned the ham to the pot with the liquid. I fried up the bacon onion and spices. When the ham was done I pulled it apart, added the beans bacon and spice mix along with the coffee and beans then simmered for a further hour.

Thanks Orfy, I am going to have a go at making that during next 2 weeks, I do like the sound of it. Nice bit of homemade rustic bread to go with it as well.

It is a large pan full.

You could easily do a half portion to make it more manageable.
I was catering for around 20 people with this.

Orfy, would this work in a slow cooker, thinking of doing it for tomorrow night. can I use coffee granules as don`t brew fresh coffee. thanks

Yes and I guess so.

I'd Brew a strong cup and add it after everything is cooked through but before it's finished.
And taste it as you go. It should "add" to the dish but it should really taste of coffee if that makes sense.

You could ruin it if you add too much.

Made the cowboy beans today, having it tonight, have had a taster and it is scrummy but I was a bit heavy handed with spices and chilli and its a bit hot hot hot but really good.

I got the end of a smoked dry cure bacon from the butchers this morning so I'm going to make this again today. Just a half portion though.
