I forgot - I had a thought ..the other option is a manual sausage stuffer....it depends how much they are compared to to the kenwood.....

......because it means you can put through a fair bit of meat before having to refill and it leaves you with a free hand, otherwise you really need to stop and start a lot or have two of you making sausages....It also means you're not reliant on power so if like here (especially in winter) power outages can be common you can still make sausages! We have a few things where we've doubled up on equipment ...one thing to use power and one manual for that very reason.

It's good the kmix is heavy stops them from rocking around the worktop when they're doing their thing :-D

Sausage/meat grinder attachment was ordered on Saturday, not expecting it 'til the middle of the week at least.

Knock on the door early this morning and it was here already :)

Have money off at Sainsburg's, so away we will go and raid the meat counter.

In our heads we see ourselves rattling off perfectly plump sausages. The reality will be like a replay of the 'Generation Game' :)

It's not the making them that's the problem it's the twisting them that can get interesting...I managed to suss it but my hubby still can't get his head around it.....

We watched that last vid yesterday and added it to favourites. Thought his sossies looked interesting. There was also one for 'hot Italian sausage', which was 'different'.

We took it in turns doing the skins and mixing.
We ended up making beef, pork and lamb varieties.
Got lots of turkey mince for tomorrow :)

We bought some collagen cases from Amaz*n.
No soaking required. They were all ready to go.

I did wonder what collagen cases were made of. So I looked them up. >dowhat<
Sometimes too much knowledge is a bad thing :D

They were easier to use than I thought, as they felt a bit papery. Though I did overstuff the beef ones a little, and some split when twisting.

It's pork on the left, 4 beef on the right and the lamb ones are in the middle.
Lamb was the hardest to do, as it seemed to stick, go slow and generally gum-up everything.

I thought they were collagen....if you can try getting some natural casings because the difference in taste and ease of making them too, is huge!
That makes me sound like a casings snob doesn't it but honestly we used collagen the first time we made sausages and then went to natural casings ....we've never gone back. We just think if you're going to make your own sausages the extra spent on the casings is well worth it.
