A different way to cook...

My colleague and his wife who were celebrating their 60th's.......

It was a lovely evening although at one point the heavens opened up!!....Stan is Maori so they had a hāngi ...the food's cooked heating stones in the pit with a large fire, placing baskets of food on top of the stones. The baskets are wrapped in foil or wet cloths and then everything is covered with earth for several hours before it's all uncovered and the baskets are lifted.
Although on this occasion the food wasn't completely cooked - think because of the weather so we cranked up the several barby's that were there (and went and fetched ours) and just finished everything off in them and the ovens...it was really yummy never-the-less.
This is pictures I found on the net...I didn't get any of the evening.

Saw a program on TV ages ago where these Polynesian islanders cooked wild boar
in a similar way. Dug a pit, lit loads of wood with big stones, wrapped the pork up
in banana leaves or the like, put on top of the hot stones and covered the whole lot
over in sand, dug it up after umpteen hours....mmmm mouth watering )eat( )eat(

Yep it's the same thing...they call them Umu's....it is delicious )eat(

The problem I have Manda is explaining to Jan why I dug a pit in her lawn! yike* )run(

I don't think that you'd have to dig down too far in our garden before you hit the water table.

The earth oven with hot rocks or embers is quite a common cooking method around the world, I know that the Ghurkas have a similar tradition. I have always fancied having a go.
