Mid-week baking?

Got some bread on the go and a lemon drizzle cake in the oven.

Any ideas for some things that are quick and easy to knock up mid-week?

Banana Bread if you've got any that are on the turn,add some sultanas to the mixture-lovely!

I find traybakes really quick and easy. I use Mary Berry's all in one recipes and just chuck it all in the mixer and it's ready to go into the oven in no time. Easy to cut up into whatever size pieces you like and big enough to last a few days too :-D

If I want something on the quick, it is usually scones or muffins. As there are only two of us and watching weight without going without, I freeze them and take two out each morning for a treat later.
I am now a widow and live with my memories.

Some great ideas.

I love banana bread and really useful to use up bananas slightly past their best at the end of the week.

Tray bake sounds good. Knock something up on a Thursday night and take into work for Friday treats.
