We more often than not have pancakes for Sunday breakfast. I got the receipt from a sourdough bread book but this must be the best pancake ever, in my opinion. Easy to knock up on a Sunday morning. Here's how to make them.
1 cup of sourdough (I use more of a mug - makes about 6) 1 tablespoon of treacle 1knob of butter 1 egg 1/2 teaspoon bicarbonate of soda dissolved in a tiny amount of milk or water
* warm the butter and treacle in a large jug in the microwave for 30 secs. You want to melt the butter but not get it hot.
* Add the sourdough mixture and whisk together
* Break the egg in a cup and whisk a little then add to the mixture and whisk again
* Add the bicarbonate to a little milk and stir well
* Add to the mixture. This causes it to go really frothy and the trick here is if you want to make loads (when all the family are staying) make it in batches else it tends to go 'flat' after a while.
* cook on a hot pan. Serve with creme fresh and fill with bananas, raspberries, strawberries or whatever is your favourite.
Pancakes sound good. The only prob for me is that I can't get a successful sour dough mix going. I don't know where I go wrong but it just goes flat on me.
Mmmmm that does sound good! I shall bear it in mind for when my girls decide to start laying. (Wonder how many teeny bantams' eggs equal 1 egg...)
