Beef and Guniness

Recipes : Beef : Beef in Guinness
Beef in Guinness
Guinness gives this stew a deep rich flavour
Ingredients
• 900 gram round steak tenderised and cut
into chunks
• plain flour for coating
• 3 tablespoons olive oil
• 1 large onion
• 1 carrot thinly sliced
• 2 celery sticks thinly sliced
• 2 tablespoons sugar
• 1 teaspoon dried mustard powder
• 1 tablespoon tomato puree
• 1 3 inch strip of orange rind
• bouquet garni
• 600 milliliters guinness
• salt and freshly ground black pepper
Instructions
1. Toss the beef in flour. Heat 2 tbsp of oil in
a large pan, and cook the beef in batches
until lightly browned. Transfer to a bowl.
2. Add t he remaining oil to the pan, cook
the onions until well browned, adding the
thinly sliced carrot and celery towards the
end.
3. Stir in the sugar, mustard, tomato puree,
orange rind, Guinness and seasoning. Add
the bouquet garni and bring to the boil. Now
add the meat from the bowl with any juices,
add water, if necessary to ensure meat is
covered. Cover with tight fitting lid, cook
gently for 2 to 3 hours until meat is very
tender.
4. Serve with rice or new potatoes.

instead of serving with rice - serve with a pastry topping binded with egg instead of water!! super )c+

if you like this recipe you can also add oysters put a flakey crust on top brushed with egg? yoke new potato and crispy carrots a lovely winter warmer
