First chutney made this year

This is such a satisfying time of year, when the allotment is giving up the first fruits of OH's labour.
Yesterday I made beetroot and chilli chutney, my favourite. Only 3 jars as we have only recently started taking up the beetroots and love the young ones to eat just cooked.

I have also made a batch of strawberry jam and also bottled strawberries, so frantically gathering jars for whatever OH brings home in any quantity next. Plenty of strawberries and rhubarb in the freezer, but I love to see the new filled jars on the top shelf in the larder. :-D
I am now a widow and live with my memories.

Hi Michael. Recipe as follows:

First bit as in recipe book. I change it a bit

2lbs(1kg) uncooked beetroots
1lb(5oog) red onions
1 1/2lbs (750g) cooking apples
1lb(5oog) seedless raisins
2lbs(1kg) sugar
3 level tablespoons ground ginger*
2pts(1ltr) malt vinegar

*I omit the ginger and replace it with 2 long red chilli peppers and 2 cloves garlic. This can be tasted while cooking and heat adjusted. Omit garlic if not liked.

Peel and chop the beetroots, onions, apples, chilli and garlic and put into a pan with other ingredients. Use a slow boil to dissolve the sugar, then cook on high, stirring occasionally to stop sticking until thick. About 35 mins.
Put into warm sterilised jar. Yield 4lbs. Enjoy

I love the whole concept of making chutney, but I have never liked the flavour sadly.
But I do love beetroot so may well give this a whirl.
It can always go for family Christmas presents if I don't like it!! {rofwl}

That sounds delicious June! Fresh beetroot never lasts long enough round here to be made into chutney, though. It's just too tasty.
