Mince Pies
Mince PiesThis morning I strained a jar of blackcurrants in white rum to bottle up the liqueur that I have made for Christmas. The blackcurrants tasted so good that I mixed half of them into a jar of mincemeat and made my mince pies. These are now in the freezer to cook at Christmas.
The other half I have mixed with apple to make a crumble for this evening. I am now a widow and live with my memories.

Re: Mince PiesWe were given some rather rough paint stripper.....I mean rakia.....earlier and shoved a load of sugar and raspberries in. Smells lovely and as I can't get sherry I will be using some of the raspberries with fresh (frozen from the garden) in our trifle.
I make my own mincemeat as I don't like peel (and if you can find it it costs a fortune) but can't get currants here so used some of our own dried figs and raisins. Might have to try some soon. Because my memory is not brilliant......http://debrazzaman.blogspot.com/

ZUCCHINI / COURGETTE CHRISTMAS MINCE 1kg Courgettes 500g Raw Sugar 600g Sultanas (you can add mixed peel if you want into that amount) 2tbsp Coarse Marmalade (any flavour will do) 2tbsp Mixed Spice 1tbsp Ground Cloves 3tbps Whiskey / Brandy / Amaretto Pop it in a pan and bring to a boil..turn down to a low boil and leave for about 45 minutes stirring frequently. Once you get to the gloopy look (hope that’s not too technical for you)…and into sterilised jars. I kid you not it tastes like Christmas mince and you don't need mixed peel ¸.•´¸.•*´¨) ¸.•*¨)✰

I have to say I am quite impressed with what you can do with courgettes now that I accidentally grow far too many. This would be nice to spice up apple crumble too.

A couple of weeks ago I threw in a slug of Amaretto. Today I added pulped blackberries, apple, pear, zest of 2 clementines, segments of 1, a handful of cranberries, and some veggie suet and made some fruity mince pies. I wasn't sure of the mix at all, it smelled a little odd, but once cooked, it became fruity, orangey, mincey, yummy :) Re: Mince PiesIn my humble opinion HH ANYTHING with Amaretto is guaranteed to be delicious (one of my every Christmas prezzies is a large bottle of the wonderful stuff
