Red onions

Post by p.penn »

I made a huge asparagus, mushroom and red onion quiche recently for my birthday party, and went to serve some leftovers 2 days later to more guests, and was horrified to see the onion had gone properly green sile}

I guessed that much as it looked completely mouldy, it couldnt be, so I googled and can you believe that red onions go green in alkaline conditions? >veg3< I was very relieved as I had never heard of that before. Do you think it was the asparagus? >coc<

It has happened to me before - cannot remember what the onion was in but it still tasted ok, just looked ridiculous!

When I was at school, we made chemical indicators out of various vegetables including onions in our chemistry lessons. Not sure if it turned green though. yike*
