A Set Honey Question

Why, when you buy set Honey from the same source do you get varying thickness, some more solid than others ?

Is it in the processing, just natural because no beehive is the same or what ?

It may not depend on the hive so much as the crop the bees have been foraging. Oil seed rape honey will set very quickly (by itself) to a coarse honey, sometimes while still in the comb.
I never made set honey only clear (that possibly set over time, in the jars), when I kept bees.

When I buy squeezy honey, it always sets after a few weeks }hairout{

P. Penn, if your runny honey starts to set just put it in the microwave for a few seconds and it will go runny again. Apparently it's quite normal that it does this.

You can also stand it in some warm water. The heat/warmth melts it again.
I would try to just warm what you want, rather than repeatedly re-heat the bottle/jar though.

I have been finding recently that most runny honey I buy sets pretty quickly, Wasn't sure if it's because my kitchen is soooo cold, or what? It hardly ever used to.
I usually buy another jar, then keep the solidified stuff to use in cooking.
