If you let them ripen seeds they won't flower any more.
Most people pick the flowers or dead-head the before the pods appear, to keep the flowers going longer. Sweet peas can give a really good display and cut flowers for ages.

I suppose you could let the pods ripen either now (if they are well on the way), or towards the end of the season, and save the seeds to plant next year, and see what you get. But they may not be as good as the ones you bought. F1 hyvbrids won't breed true, and if you have a row of mixed colours who knows what the next generation will be. Size & perfume might vary too.
Depends how curious you are.

I love sweetpeas!

Mine went really well last year. Here's a picture:

I took the pods off for a while because I wanted more flowers. After a while, I stopped doing that and left them. Because they were planted in a sheltered area, they self-seeded and are coming back on their own this year. :)

I love sweetpeas. Last year I bought some seeds but then "lost" them only to find them again recently while looking for something else LOL

Anyway, I've bought some more seeds - some from Premier Seeds Direct on ebay and I also found a little online shop called English Sweet Peas (delivery free if spend over £6.50p .... very easy to do ..... I went for high perfume / fragrant flowers but there's loads of different types of sweetpeas from dwarf to giants, blousey blossom or highly colourful. It's just amazing how many types there are.

This time I know EXACTLY where the seeds are and I will not forget to sow them this year either!

I have just been out and bought some seeds - old fashioned. Hopefully they will be ok - didn't have the one I wanted.
