A good use for egg yolks

While browsing through a book on baking I saw a few recipes that used egg whites. Other than custard or maybe mashing into potatoes I can't think of a good way of using the egg yolks. Any ideas?

Adding an extra yolk to scrambled or fried egg or omelette.
The base part of lemon meringue (without the meringue)
Don't a lot of sauces use them?

Good ideas Mo. I just can't waste so when I use a recipe that asks for egg whites must plan an omelet to follow. )t'

Failing all else, your dog would probably love them.

Also aren't egg yolks good for shiny hair? Just have to rinse in cold water. Scrambled egg hair isn't attractive on anyone! :)

How about lemon curd or egg custard?

There are more uses than I realised. Just read a recipe for delicious caramel ice cream which lists 2 egg yolks.

My thoughts were mayonnaise; with milk in quiche; beaten and stirred into savoury rice.

I seem to remember from a very old thread that you can beat them and then freeze for use later.
