Plums, Medlars, Apples, Hazelnut, Pears, Cobnut, Walnut and Quince!! Now Quince is my absolute favourite Jam - no two ways - delicious! We usually make Quince Jam mixed with Apple as a pectin substitute. We also mix it with other fruits for Crumbles. Only last night we had Apple, Pear and Quince Crumble (I like it with Ice Cream!). Medlar is an 'olde englishe' fruit and can be used much the same as any other fruit.
Bit like Crabapple in so far as being a more fragile thing to cook etc. It has a very acquired taste, quite bitter. You pick the fruits when they look as if they're past it, soft and squelchy.
