Crumpets - a bit of a challenge

Wendy has been buying crumpets since we got back to UK and as we don't get them in Thailand, I thought I would have a go at making them.

It turns out that making the batter is easy enough but getting them cooked exactly right is a bit of a challenge. First, you have to make sure the crumpet rings are well greased or they stick. Then getting the temperature of the pan exactly right takes a bit of trial and error otherwise the bottoms just burn but they aren't cooked through.

Today's batch look the best so far but still could do better.

I have never tried to make them and must say it sounds a challenge. I watch the pioneer woman on tv and she made them a couple of days ago.
I have no doubt that you will make them to perfection in no time. )t'

My (very few) attempts at making crumpets always end up with me pulling the rings off and ending up with something closer to pikelets.
Totally edible, but not crumpets. I guess I need better rings, but never really think about it until I want to make some haha.

So what is the difference between Crumpets & pikelets? I always thought that crumpets were what we Londoners called those round things with holes that you toast (on a toasting fork in front of the fire if you are being fanciful, or under the grill).
And that pikelets and muffins were regional names for the same things

I always thought that crumpets and pikelets were the same thing. I remember calling them pikelets when we were kids.

Looking online, pikelets are closer to a scotch pancake.
I suppose I always saw pikelets as a flat crumpet type thing.

In my world muffins are a bready type flat bap thing. Obviously the american version is a cupcake.

I remember having had pikelets as a kid. Haven't thought about them for years.

I still need to master crumpets though :-D
