Im not sure to be honest, confused> its the first time ive tried!! I blanched them slightly before freezing..... Will have to wait and see i suppose!! )sh

I've frozen them before and they're fine in soups and stews etc - but bit mushy otherwise. Will be spending monday morning making all things courgette! Thanks for the recipes folks!

Hi! Just returned from 5 days away and im facing the same thing!!

My chooks dont like them either!!! They prefer my chard in fact love it!!)

I have made a a huge pan of basic tom sauce with courgettes (liquidised) to freeze to use as curry, pasta sauce or chilli once defrosted. Hopefully i will be pleased with this in the winter. Also made ratatoullie to freeze.

I am hoping tomatoes get on with it and ripen then I can do the frozen base thing - great idea!

My hens also love chard. Wonder why not courgette? Have tried it raw and cooked but beaks are turned up at both!! Lynne you must have very good hennies!!

I've had the hens since they were 12 hours old, they think I'm their mother!
Oh and I put some recipes under Food and Drink, to help reduce that mountain of courgettes.

Looks like I'm going to have a mountain of tomatoes...

That mock duck sounds great- would love to have the recipe.
I imagine you can add touches that suit your taste!

hi LyneP,this is the way i do it hope you like it
cut both ends off the marrow and scoop out the seeds
brown the mince and onions
add stock and thickener (corn flour or gravy granuels)
you could put a few peas in or sweet corn
sometimes i put a tin of chopped tomatoes in
seasoning
stuff the marrow,making sure you put some tin foil around the bottom
wrap some foil around the top(this keeps the filling in) then wrap the whole marrow and bake in the oven for about an hour )lck( )lck( )lck(

Hiya

My neighbours gave us loads of marrows and courgettes last year here's what we did with them, stuffed marrow, lasagna using courgette instead of lasagna, mussaka courgette instead of aubergine, courgette pancakes grate them and add to pancake mix with seasoning, add to spag bol, make a chutney with carrots, onions, green pepper, onion, apple grate everything and cook then add some oil and jar, roasted veg, I also gratted and froze alot to use in the winter to add to soups and caseroles, spose you could try pickling them as well. Will let you know if I remember anything else.

I hate to do this to you all, but try this recipe from somewhere else...they are really, really nice, especially with added nuts etc



Cocoa Courgette Muffins

Makes 11-12

10 oz (280g) self raising flour
Half teaspoon (2.5 ml) bicarbonate soda
Half teaspoon (2.5 ml) salt
2 teaspoons (10 ml) ground cinnamon (optional)
3 Tablespoons (45 ml) unsweetened cocoa powder
1 egg
4 - 5 oz (110 - 140g) light brown soft sugar
2 - 3 fl oz (60 - 90 ml) milk or water
2 teaspoons (10 ml) vanilla essence (I used almond & they were fine)
12 oz (340 g) courgette, skinned & finely grated, & water squeezed out a bit
3 fl oz (90 ml) vegetable oil or 3 oz (85 g) butter, melted
4 oz (100 g) walnuts/sultanas/Chocolate Chips (optional)

Method
1. Prepare muffin tins. Preheat oven to 375 - 400 F (190 - 200 C), Gas Mark 5-6.
2. In a large bowl, sift together flour, bicarbonate of soda, salt, cinnamon and cocoa powder.
3. In a medium sized bowl, beat egg with a fork. Add sugar, milk/water, vanilla, courgette and oil/melted butter. Stir well.
4. Pour all of the wet mixture into dry. Stir just until combined, adding dried fruit during final strokes. Batter will be lumpy but no dry flour should be visible.
5. Spoon into tins/paper cases. Bake for 20 - 25 minutes, until tops spring back when pressed gently

(you can make it in a shallow tray tin - cook for about an hour?)

Grated courgette or beetroot in a chocolate cake mix makes a lovely moist cake.
