Crack the eggs into a dish and separate the yolk from white and freeze in small quantities so you know how many whites or yolks are in each container. )c+ (f+

I whip them up whole and use them for cakes or omelets.
The texture is thicker after freezing, but results seem the same.
I do them in 2s (yoghurt pot) or weigh 1lb for a batch of fruit cake.

....or whisk, add salt or sugar and put into yoghurt pots (or similar) before freezing. Obviously mark whether salt or sugar so you know whether to use for sweet or savory. I've been advised you may want to add a little water as the fluid content can be lost in freezing. I've not needed to however. :-D
