Lemon marmalade

Well, today I am putting the strawberry jam incident to rest and attempting to make lemon marmalade. :shock: I am doing it like I make my seville orange marmalade, where I boil the fruit whole first.

If it works it will be relatively easy and very cheap as I got bargain lemons. )c( so keep your fingers crossed for me!

I'd love to know how it comes out. I've never tried lemon marmalade!

Well, so far so good. The only slight problem I am having is getting the hob on my rayburn hot enough to reduce the liquid by half. That is proving tricky.

Well, I am hoping it has more or less set now - just waiting for it to cool a little before popping in jars so the peel doesn't rise to the top.

Doesn't quite look like the delicate pale yellow I imagined - it's sort of murky ginger and looks like it's got strips of stripey gheko in it. yike*

Helen- I admire your persistence! I'm too scared to even attempt to make jam (although have considered giving that cheat's marmalade in a tin a go!). Don't despair- lots of my cooking tastes quite nice with that burnt aftertaste, especially ratatouille for some reason.....! You could always call it roasted lemon marmalade. :-D

Well, amazingly it tastes ok! {rofwl}

I must have burned at least £10 of oil getting/keeping the hob hot though. Manda - have you made marmalade in your jam maker? Honestly, I think it will pay for itself quite quickly, especially if I can talk one of the family into buying it for me! )grin2(

Lakeland have sold out and it looks as if the new batch arriving end Aug are coming in at £20 more. yike*

That's a 20% increase. I don't know how they can do that. I am very unimpressed/
