Pork pies.

Any tips for pork making pork pies.

I've got the bread and Cornish pasties under my belt so the pork pie is the next task.

I'm thinking along the lines of a lard water pastry, chopped shoulder, a bit of bacon, maybe a little anchovy paste, sage, thyme, salt and pepper. I think Mace and allspice may be a little to much with the anchovy.

For the jelly I don't want to go the trotter route this time. this time. (If it work well I will next time) I was going to use a stock and gelatine sheets but the butcher has given me a commercial product that is dried trotter jelly and stock in a powder for.

Any idea's thought or recipes?

Sounds good. I used to make raised pies with hot water/lard pastry. It is really simple and tasty. Try to avoid the bottom corners being too thick. Haven't made it for years mostly because of the calorie/saturated fat content. )eat(

I think I'm going to use this recipe for the pastry. I may reduce the quantities by a third.

This is the my own recipe I think I'll use for the filling.

454g chopped shoulder.
3 rashers unsmoked bacon
1/2 teaspoon of anchovy paste
1 tsp fresh chopped sage
1/2 tsp Allspice
1/2 tsp nutmeg
couple of pinches of salt.
1 tsp ground black pepper.

and I'll make them following this method.

Asda are doing pork shoulder at £3 a kilo.
Just got a big join and cut it in half.

Half for roasting and half for pork pies. The 2nd batch will have black pudding in it. >stir<

They look good Orfy, were they difficult to make and can you freeze them, what are you going to make next. I am absolutely hopeless with pastry, it usually turns out like concrete!! )t'

wow, they look great Orfy )t' I've never made lard pastry before but wouldn't mind giving it a try, thanks for the link (and your recipe looks good too - not sure about the anchovy paste ...)

I fouad I had to add more water to the pastry to get the right consistancy.
They are very nice.
they do take time to make, I am going to freeze some of them.

A turkey baster wood be good for adding the jelly.

The black pudding in the second batch worked really well.

The pies look really yummy Orfy. How satisfied was you with the powdered jelly?
I've had the pork and trotters in the freezer for about 3wks now to make raised pork pies, but because I'm never 100% happy the jelly, haven't yet got around to making mine. Your's look really good. My OH loves black pudding, so I'm interested to know how yours with black pudding turn out. Do let us know. )t'

The black pudding version was really good.
Yes the powdered jelly was good but I used one supplied by my butchers. It's called savoury jelly and has stock flavourings.
I had to microwave it for 30 seconds a couple of times to stop it setting. I think a turkey baster is the way to go rather than a jug.
