Thanks for the suggestions - I like a good northern salad but wasn't sure if that would be too much potato.

They'd probably have salmon and smoked haddock - maybe a bit of mackerel if it's not too freezer burnt.

I make salmon fishcakes and serve them with peas and new potatoes and a dressing made with cucumber yoghurt and mayonnaise.

I hadn't thought along those lines - pickled veg would be a really nice contrast to the fish. Thanks for that suggestion.

For me it's all about sauces.....Watercress Mayo if it was just Salmon , Cucumber and dill sauce made up with creme fraiche or horseradish sauce......Tartare Sauce if mixed...

Watercress salad, some kind of slaw...something crunchy / veggie.

Beetroot cooked in balsamic vinegar - reduced so it make s a glaze on the beets....they are really yummy.

If you want something hot could be stir fry, or roasted veggies but with a bit of crunch like yams in them.

Sweet potato fried for something a bit different to chips....I love Kumara (which is what they are over here) fries....or something like parmesan cream noodles.

Reading all about the fishcakes has given me a yearning for them so have treated us to some salmon and going to make them tonight. bought fresh salmon, not a lot but usually make them with a little tin of salmon. going to have new potatoes and peas and yogurt / mayonaisse, cucumber sauce. )eat( )eat(
