Rissoles!
Rissoles!Somebody said rissoles to me today, and I thought I haven't had any since mother used to make them circa nineteen-fifties!
I googled them and came up with various recipes including nut rissoles, which I may make this week. Anyone do rissoles? I'd like to live as a poor man with lots of money.

Re: Rissoles!Not had them since I was a nipper , Mallard , but have been known to say rissoles instead of another word that sounds very similar , in moments of stress

Re: Rissoles!My mother used to make them on a Monday if we had had Lamb for Sunday dinner and there was enough left over.All it was is left over meat(usually Lamb) and onion minced together,rolled into balls and put in the oven to cook.
When Irish eyes are smiling,they are usually up to mischief.
Re: Rissoles!We had a version which was chopped onion, minced leftover meat of whatever kind, breadcrumbs to go further, a bit of tomato puree and worcester sauce, seasonings and an egg to bind. They're a sort of UK pre-burger-burger. Or you could put them in gravy with mash & veg of your choice.

i use what ever is left over, sometimes coat them in breadcrumbs and deep fry yum Mandy

But today we had something very similar (and much praised by our fussy son): buckwheat 'things'. Leftover cooked buckwheat with chopped pickled beetroot and some greens which I've already forgotten what they were. Lots of cayenne pepper, soy sauce, fresh grated ginger, an egg, flour. Re: Rissoles!Basically a modern burger using cooked meat from roasts etc minced, onion, egg to bind and a splash of Worcestershire sauce
Re: Rissoles!Just wondering where you're from originally Annamieke, as your cuisine sounds interesting. The buckwheat rissoles sound tasty, I liked your suggestions for fishcakes, and I've been intrigued by another couple of your threads.

Here comes the recipe, but I haven't tried it out yet: hutspot met klapstuk 550g beef brisket, 1 1/2 kg carrots, 1 1/2 kg potatoes, 350g onions. Wash brisket and put on with 750ml salted water. Cover and cook for 1 hr. Add 1½kg carrots in pieces, 1½kg quartered potatoes and 350g quartered onions and cook for 25-30 more mins. You may have to add some water, but keep it quite dry. Take out brisket and slice. Mix veg, season and put brisket on top. But I've lived in Britain for about thirty years so only sometimes something comes up from the past. Re: Rissoles!By the way, the hutspot recipe, which I in my innocence/stupidity made for four, hardly fitted in my largest pan. Six to eight I would say!
