Egg Dishes [receipies]Now I have eggs in abundance, what about some more unusual egg dishes than fried,scrambled and boiled. Some one out there must know a few. Come on lets be hearing about them.

Don't forget you can freeze them for when the girls go off lay, good for omelettes and cakes (beat them before you freeze them). Egg Dishes [receipies]Mo
They are fine - I did some last year when I had the 'new' girls as in May I had 74. I beat the whole eggs up and froze them in 4's (right size for omelettes and cakes). These got used when the lay went off. ps I do not use salt and these were unsalted.

Frittata's are nice they are like a spanish omlette.

If you can't be a good example........ you will just have to be a horrible warning Frittata's are a great way of using up left over vegies, excess vegies from the garden.......and hiding vegies from fussy 3yo's too.
Others for eggs - fried rice, fish pie, tuna caserole, ceaser salad, meat loaf (with whole boiled eggs through the centre), potatoe salad. There are so many things to put eggs into without the egg being the main part of the recipe - I find if I have too many egg based meals, I get very sick of them. cheers Jodi
Baked Egg Custard
Cakes More Cakes Bizgits Souffle omelette is a nice change, sort of comes out like a frittata a bit - you separate the eggs, whisk up the whites till they're stiff (but not tooo stiff), then fold in the yolks and a bit of salt and pepper (and maybe some chopped greens or sprunions), then cook on a lowish heat in a greased, preheated frying pan. turn on your grill. Once the edges seem done then carefully put yer cheese/tomato/insertothertoppinhere on top, and stick it under the grill to cook the toppings and the rest of the omelette. Should come away from the pan and slide off onto your plate to make you just full enough to be uncomfortable. Im giving the lemon curd I made yesterday to my Dad as its his birthday. I feel a bit smug saying I made it with eggs from my hens! (I have got him other presents Im not that tight)
Anna sent me another recipe as the other one she posted the link to was in cup measurements and when I converted it into grams I dont think it was quite right. Its got a bit of a kick to it and you end up looking like this........... So Im going to try that one when my girls lay some more eggs, some are a bit soft at the moment and some are all bumpy. Ive put some ACV in their water today and some poultry vits so fingers crossed that may help.
try swirling a beaten egg into soup (as in chinese sweetcorn based soups) or pop a whole egg into a bowl of hot soup just before serving. this works really well in my opinion with peppery soups such as water cress or turnip. it acts like a healthy alternative to cream. it's a good idea to liquidise the soup first as well.
